Species of the genera Aspergillus, Trichoderma, and Penicillium are among the most efficient hosts for the production of extracellular proteins.

Penicillium griseoroseum have the potential to be used for the production of pectinases. Recombinant Penicillium griseoroseum strain can be constructed and used to overproduce an extracellular pectin lyase (PL) under the transcriptional control of the strong promoter. This recombinant strain provides the advantage of PL production in submerged fermentation system. Our group has studied several aspects of the Penicillium griseoroseum physiology and genetics in order to search for strains over-producing PL for industrial application.

Penicillium griseoroseum has given the best results for the biosynthesis of acidic protease. The production of acid proteases by Penicillium griseoroseum using solid-state fermentation technique. Different cultural conditions are employed to enhance protease production in the fermented mash.

One important approach to increase the production of enzymes in fungal species is the isolation of mutants. In that case, if a selection pressure is present, phenotypes of interest can be more easily obtained, especially the phenotype that is associated with pleiotropic mutations (single mutations affecting multiple functions) increasing the fungal enzyme production.
